Summer’s make me miss my dad. The smell of tomato plants, picking plump juicy tomatoes from the garden, and especially tomato sandwiches.
My dad loves tomatoes.
I mean he LOVES them. In a way I’ve never seen anyone love anything. The man would eat them all day every day if he had the option, I’m quite certain.
The summer’s of my childhood were filled with tomatoes from the garden. Cherry tomatoes, plump big tomatoes, it didn’t matter.
But the mother of all tomato goodness was the tomato sandwich. With three simple ingredients, we were transported to tomato heaven.
It was simple. Slice those juicy tomatoes into hefty slices, slather on a thick layer of mayo on EACH piece of white bread, slap together, and enjoy!
The juice from the tomatoes would soak the bread and by the end of it, we’d be slurping up mayo tomato yumminess!
Both my dad and I LOVED these simple sandwiches and would eat them gladly through the end of summer, usually with a crisp fresh picked cucumber on the side.
Tomato sandwiches these days look a little different for me. No more white bread – however I’ve got some amazing whole grain stuff. I was unsure about the new bread, but I was pleasantly surprised. The joy is still the same!
I know dad would insist on the white bread still, but maybe I can convince him otherwise. It’s worth a shot.
